The mushroom eryngi or king oyster mushroom is the largest of the oyster mushroom genus. They're hailed for their meaty texture and umami flavour.
Eryngii, also known as the King Trumpet mushroom, offers a significant source of Niacin (35% RDV), Riboflavin (15% RDV), Pantothenic Acid (15% RDV) and Vitamin D (15% RDV). It is also cholesterol and sodium free in addition to low in calories.
